Yoghurt Chicken Fajitas, with side of Guacamole and Salsa









 









Serves: 4 - 6
Preparation time: 15 minutes
Cooking time: 10 minutes


Ingredients:
  • 500g chicken breast, sliced
  • 1 cup yoghurt
  • 3 tsp salt
  • 2 tsp pepper
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 1 tsp tumeric
  • 2 tsp crushed garlic
  • 3 medium onions, sliced
  • 1 red capsicum, sliced
  • 1 greed capsicum, sliced


Directions:
  1. To make the marinade, in a large bowl mix the chicken, yoghurt, salt, pepper, coriander powder, cumin powder, paprika, tumeric and crushed garlic. Let sit for ten minutes
  2. In one large wok, sauté marinated chicken on high heat for 2 minutes, and lower heat. In another large wok, add vegetable oil and sauté sliced onion and capsium for 5 minutes.
  3. Add the capsicum and onion to the wok with the chicken, and saute until thoroughly cooked.
  4. Serve with guacamole, salsa, sour cream, grated cheese and finely sliced iceberg lettuce and tortilla’s.


Guacamole
  • 2 soft avocados
  • ¼ red onion, finely chopped
  • 1 lime
  • 2 tsp paprika power
  • 2 tsp salt
  •  
Soften avocoda on counter top before peeling.  Remove skin and this a fork mash the avocado. Add onions, squeezed lime juice, paprika powder, salt and mix.  Ready to serve as a side dish.


Salsa
  • 4 tomato's, finely chopped
  • ½ red onion, finely chopped
  • 1 lime
  • 1/3 cup coriander, finely chopped
  • salt
  • pepper
  • 1 tsp paprika
In a bowl mix tomato's, onion, coriander, lime juice, salt, pepper and paprika.  Ready to serve as a side dish.
