Lyaly Lebanon

Lyaly Lebanon

INGREDIENTS:

4 cups milk
1 cups of smeed ( Semolina Wheat)
1 teaspoons finely chopped or ground Mestekeh( Arabic Gum)
Finely chopped or ground pistachios
1 egg
ASHTA CREAM ( see below to make)
Attar (sugar Syrup/see below to make)

PREPARATION:

In a pot, put milk and semolina  on a medium heat. It is important to keep stirring in order to prevent the mixture from clumping or sticking to the bottom of the pot.
Add the egg while you stirring, stir with a wooden spoon until it is thick.
Add the ground Mesteka( Arabic Gum) to incorporate then remove from heat and immediately pour into individual cups or one large bowl.
Then add on the top of it the ASHIA CREAM
Sprinkle the surface with ground pistachios or any thing you like to add on the top of Lyaly Lebanon, serve it with the Attar (sugar Syrup/see below to make).

-ASH-TA CREAM ( Easy Method) for the topping
Ash-ta is a clotted cream, traditionally made from skimming boiled milk.
INGREDIENTS:
6 cups of milk
½ cup of corn flour
2 cups of icing sugar
1 tablespoon of rose water
1 tablespoon of orange blossom water
PREPARATION:
1) Heat 5 cups of milk in a saucepan until it starts to boil. Add the sugar and whisk until it is dissolved.
2) Dissolve the corn flour in the remaining 1 cup of milk then whisk it in the milk and sugar. Stir with a wooden spoon until it is thick.
3) Add both the rose and orange blossom water and whisk to incorporate then remove from heat.

-How to make syrup  

2 cups of sugar
1- 1/2 cups of water
1tsp. Lemon Juice
