Chicken croquette



Perfect for left over chickens and ideal for kids..

1 chicken breast or thigh previously cooked (either boiled, broiled or grilled) and minced in the mixer
1 small finely chopped onion (in the mixer)
1 boiled mashed potatoe
1 tbps flour
1 cup milk + 1/4 cup whipping cream

bread crumb and finely crushed corn flakes (in the mixer)
1 beaten egg
salt, pepper, thyme, cinnamon

In a non stick pan, heat some oil and put the onion, stir till golden and tender, season with salt and pepper, add the chicken (minced) and stir for 3 min, add the potatoe and stir till well incorporated.
add the flour and mix for 3 to 4 min to cook the flour, then add the milk and the cream and cinnamon and continue stirring for about 10 min till the mix is no longer sticking to the pan..
Put in a a shallow glass dish and cover with cling film, refrigerate for an hour.

Form croquettes and dip in beaten eggs previously seasoned with salt and pepper, then in a mix of breadcrumbs and corn flakes with a pinch of thyme, salt and pepper and fry in oil till golden, they wont take too long since they are already cooked
